לפני שהופך לחפיסת שוקולד חלקה שנמסה בפה, השוקולד עובר מסע מדהים ומפתיע שמתחיל דווקא בתוך פרי צהוב-כתום גדול שגדל ישירות על גזע עץ הקקאו, ולא על הענפים כמו רוב הפירות. הפרי הזה, שנקרא "תרמיל קקאו", נפתח וחושף בתוכו כ-30-40 פולי קקאו, עטופים בציפוי לבן ומתקתק שדומה יותר לפרי טרופי מאשר לשוקולד. השלב הראשון, ואולי המפתיע ביותר, הוא תסיסה: הפולים נערמים ומכוסים בעלי בננה למשך כמה ימים, ובזמן הזה חיידקים ושמרים טבעיים מתחילים לפרק את הציפוי המתוק שסביבם. בלי השלב הזה, לפולי הקקאו כמעט אין את הטעם העשיר שאנחנו מכירים - התסיסה היא זו שיוצרת מאות תרכובות ארומטיות שמעניקות לשוקולד את הטעם המורכב שלו. אחרי שהפולים מתייבשים בשמש, הם נשלחים למפעל, שם קולים אותם, בדיוק כמו פולי קפה, כדי לפתח את הטעם עוד יותר. לאחר מכן טוחנים אותם עד שהם הופכים למשחה עבה שנקראת "משחת קקאו". מכאן מוסיפים חמאת קקאו, סוכר ולפעמים חלב, ומערבבים הכול במכונה מיוחדת בתהליך שנקרא "קונשינג" - ערבוב וטחינה עדינים שיכולים להימשך בין כמה שעות למספר ימים שלמים, עד שהתערובת הופכת חלקה לגמרי. בסך הכול, ממש כל חפיסת שוקולד היא תוצאה של עבודה שנמשכת שבועות, ולפעמים חודשים, ומערבת חקלאים, קולים וטוחנים - עוד לפני שהיא בכלל מגיעה לעטיפה.

Before it becomes a smooth chocolate bar that melts in your mouth, chocolate goes on a surprising journey that starts inside a large yellow-orange fruit growing directly out of the trunk of a cacao tree, not on the branches like most fruit. This fruit, called a cacao pod, opens up to reveal about 30 to 40 cacao beans, wrapped in a sweet, sticky white pulp that tastes more like a tropical fruit than chocolate. The first step, and maybe the most surprising one, is fermentation: the beans are piled up and covered with banana leaves for several days, and during that time natural bacteria and yeast start breaking down the sweet pulp around them. Without this step, cacao beans barely have the rich flavor we know — fermentation is what creates hundreds of aromatic compounds that give chocolate its complex taste. After the beans dry out in the sun, they're shipped to a factory, where they're roasted, just like coffee beans, to develop the flavor even further. They're then ground down until they turn into a thick paste called cocoa mass. From there, cocoa butter, sugar, and sometimes milk are added, and everything gets mixed together in a special machine in a process called "conching" — gentle grinding and mixing that can take anywhere from a few hours to several full days, until the mixture turns completely smooth. All in all, every single chocolate bar is the result of weeks, sometimes months, of work involving farmers, roasters, and grinders — long before it ever reaches its wrapper.
